Dal Bati Churma

Dal Bati Churma best defines the Rajasthani cuisine. If you are in Rajasthan, you cannot miss out on this signature dish of the kings. This mouth-watering delicacy is a combination of three different items and is served quite differently. First, the spicy dal is prepared using a combination of five different dals (grams), then tiny, oval-shaped batis are baked with a mixture of wheat flour, semolina, gram flour, salt and milk. Churma is the sweet version of bati, which is later crushed over dal and bati mixture.

Laal Maas

Your trip wouldn’t be considered complete without tasting the crowd’s favourite dish laal maas (red meat). It is probably one of the finest meat preparations in the country, which is exclusive to Rajasthan. This super spicy and super delicious dish gets it red hot colour (and name) and flavour from the generous amount of red chillies used in its preparation.

Gatte ki Sabzi

Easy to prepare, extremely popular and supremely delicious, gatte ki sabzi is local’s favourite curry prepared using buttermilk and a mix of spices. Gram flour balls (gatte) are made and dipped in this curry and served with rice or bajre ki roti.

Panchmel ki Sabzi

Panchmel ki sabzi is a combination of five ingredients, is extremely healthy and tastes totally divine. There are very few food items that score high on taste and health and panchmel ki sabzi is one of them.
